Conversion to Judaism is religious act and an expression of association with the Jewish people. Person not formally converted to Judaism but adopted any or all beliefs and practices of Judaism are referred to as righteous gentiles.
Requirements for converting to Judaism are: circumcision, immersion in a ritual bath for both men and women, offering a sacrifice in the Temple. It is also required a convert to understand and accept the duties of the halakha, classical Jewish religious law.
After confirming that all these requirements have been met, the beth din issues a "Certificate of gerut" (Shtar Giur), certifying that the person is now a Jew.

Judaism discourages converts, because of the belief that one person's religious path needs to match his/her natural path. They believe that there are 70 soul families, each with its own spiritual path. That is why Judaism forbids Jews from trying to convert anyone to Judaism, unlike Christianity where Church is encouraging people to convert to Christianity.

I don't understand why is it so important to officially convert to another religion. I think only important thing is what you believe inside.

People want to be a part of the community and want to feel accepted. Of course, the most important part of converting is to really believe.
